  • 4 medium potatoes

  • 1 onion

  • 6 eggs

  • 1/2 cup olive oil

  • Salt and pepper to taste

Instructions:

  1. Peel and slice the potatoes and onions into thin slices.

  2. Heat the olive oil in a frying pan over medium heat. Add the potatoes and onions, and cook for 10-15 minutes until they are soft and golden brown.

  3. In a large bowl, beat the eggs and season with salt and pepper to taste.

  4. Add the cooked potatoes and onions to the bowl with the eggs and stir to combine.

  5. Heat a little more olive oil in a clean frying pan over medium heat. Pour in the egg and potato mixture and spread it evenly in the pan.

  6. Cook for 5-7 minutes until the bottom is golden brown and the top is almost set.

  7. Place a large plate over the frying pan and flip the tortilla onto the plate.

  8. Slide the tortilla back into the frying pan and cook for another 2-3 minutes until the other side is golden brown.

  9. Serve hot or cold, and cut into wedges.
