  • 2 chicken breasts, sliced into thin pieces

  • 4 cups of chicken stock

  • 2 cans of coconut milk

  • 2 stalks of lemongrass, bruised and cut into 5cm pieces

  • 5 kaffir lime leaves, torn

  • 4 slices of galangal

  • 5 Thai chilies, crushed

  • 1 medium-sized onion, chopped

  • 1 tomato, chopped

  • 2 tablespoons of fish sauce

  • 2 tablespoons of lime juice

  • 1 tablespoon of sugar

  • 1/2 cup of fresh cilantro leaves

Instructions:

  1. In a large pot, heat the chicken stock over medium heat. Add the lemongrass, kaffir lime leaves, galangal, and chilies. Simmer for 5-7 minutes, until fragrant.

  2. Add the sliced chicken to the pot and cook for 5-7 minutes until it's no longer pink.

  3. Add the chopped onion and tomato to the pot and simmer for another 2-3 minutes.

  4. Pour in the coconut milk and bring the soup to a boil. Reduce the heat to low and let it simmer for another 5-7 minutes.

  5. Stir in the fish sauce, lime juice, and sugar. Adjust the seasoning to your taste.

  6. Remove the soup from the heat and stir in the cilantro leaves.

  7. Serve hot with steamed rice.
