Time of Preparing:

  • 1 hour 30 minutes

Instructions:

  1. Preheat oven to 400°F/200°C

  2. Season the beef tenderloin with salt and pepper.

  3. In a large skillet, heat the olive oil over high heat. Sear the beef on all sides until browned, about 2 minutes per side.

  4. Remove the beef from the skillet and let it cool.

  5. In the same skillet, add the mushrooms, shallots, garlic, and butter. Cook over medium heat until the mushrooms have released their liquid and the mixture is dry, about 15 minutes.

  6. Add the white wine and beef broth to the skillet and cook until the liquid has reduced by half, about 5 minutes.

  7. Roll out the puff pastry on a floured surface and place the beef in the center. Spoon the mushroom mixture over the top of the beef.

  8. Wrap the puff pastry around the beef, sealing the edges with the beaten egg.

  9. Brush the beaten egg over the top of the pastry and use a knife to create a few vents on the top.

  10. Bake the Beef Wellington for 45 to 50 minutes, or until the pastry is golden brown and the beef is cooked to your desired temperature.

  11. Let the Beef Wellington rest for 10 minutes before slicing and serving.

  12. Bon Appétit!
