For the Macaron Shells:

  • 1 3/4 cups powdered sugar

  • 1 cup almond flour

  • 3 large egg whites, at room temperature

  • 1/4 teaspoon cream of tartar

  • 1/4 cup granulated sugar

  • Food coloring, as desired

For the Filling:

  • 1/2 cup unsalted butter, at room temperature

  • 1 1/2 cups powdered sugar

  • 1 teaspoon vanilla extract

  • 1-2 tablespoons heavy cream

  • Food coloring, as desired

Instructions:


For the Macaron Shells:

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.

  2. In a food processor, pulse the powdered sugar and almond flour until well combined and fine.

  3. In a large mixing bowl, beat the egg whites on medium speed until foamy.

  4. Add cream of tartar and beat until soft peaks form.

  5. Gradually add the granulated sugar, one tablespoon at a time, and beat until stiff peaks form.

  6. Fold the almond flour mixture into the egg whites, gently until fully incorporated.

  7. Add food coloring, if desired, and gently fold in.

  8. Transfer the mixture to a piping bag fitted with a round tip.

  9. Pipe small rounds of batter onto the prepared baking sheets.

  10. Tap the sheets on the counter a few times to release any air bubbles.

  11. Let the macarons rest at room temperature for about 30 minutes, until a skin forms on top.

  12. Bake the macarons for 12-15 minutes, or until the edges are set and the shells are firm.

  13. Remove the macarons from the oven and let them cool completely on the baking sheets.

For the Filling:

  1. In a mixing bowl, beat the butter on medium speed until creamy.

  2. Gradually add the powdered sugar, vanilla extract, and heavy cream, and beat until smooth and creamy.

  3. Add food coloring, if desired, and mix well.

  4. Transfer the filling to a piping bag fitted with a round tip.

  5. Pipe a small amount of filling onto one macaron shell, and top it with another shell.

  6. Repeat with the remaining macarons.
