Moroccan Tagine Recipe - A Hearty and Flavorful Stew Perfect for a Cozy Night In

Tagine is a traditional Moroccan stew that is known for its warm and comforting flavors. This hearty dish is perfect for a cozy night in or for serving a crowd. Follow this recipe to create a delicious and aromatic tagine that will transport your taste buds to Morocco.


Make Delicious Tagine with Kitchen Pal


Ingredients:

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 1 teaspoon ground ginger

  • 1 teaspoon ground cumin

  • 1 teaspoon ground cinnamon

  • 1 teaspoon paprika

  • 1/2 teaspoon ground coriander

  • 1/4 teaspoon cayenne pepper

  • 900gr boneless lamb shoulder or beef chuck, cut into 4cm piece

  • Salt and black pepper, to taste

  • 1 cup chicken broth

  • 1/2 cup dried apricots, chopped

  • 1/2 cup raisins

  • 1/2 cup slivered almonds

  • 2 tablespoons honey

  • 2 tablespoons chopped fresh parsley

  • Cooked couscous or rice, for serving

Instructions:

  1. Preheat your oven to 350°F (175°C).

  2. Heat the olive oil in a Dutch oven or a large oven-safe pot over medium heat.

  3. Add the chopped onion and garlic to the pot and cook until the onion is softened about 5 minutes.

  4. Add the ground ginger, ground cumin, ground cinnamon, paprika, ground coriander, and cayenne pepper to the pot and cook for another 2 minutes, stirring frequently.

  5. Add the meat to the pot and season with salt and black pepper. Cook until browned on all sides, about 8 minutes.

  6. Add the chicken broth to the pot, cover it with a lid, and transfer it to the oven. Cook for 1/5 hours, stirring occasionally.

  7. Add the chopped apricots, raisins, slivered almonds, and honey to the pot and stir well. Return to the oven and cook for an additional 30 minutes.

  8. Remove the pot from the oven and let it cool for a few minutes before serving.

  9. Garnish the tagine with chopped fresh parsley and serve with cooked couscous or rice.
