  • 2 1/4 tsp active dry yeast

  • 1 tsp salt

  • 1 tsp grated lemon zest

  • 1 tsp grated orange zest

  • 1 tsp vanilla extract

  • 1 egg yolk

  • 1 tbsp water

  • Candied fruit (optional)

  • Pearl sugar (optional)

Instructions:

  1. In a small bowl, dissolve the yeast in the warm milk and set aside for 5 minutes.

  2. In a large mixing bowl, combine the flour, sugar, lemon and orange zest, and salt. Mix well.

  3. Add the yeast mixture, beaten eggs, and melted butter to the dry ingredients. Mix until the dough comes together.

  4. Knead the dough on a floured surface for 10-15 minutes until it becomes smooth and elastic.

  5. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours, until it doubles in size.

  6. Once the dough has risen, punch it down and divide it into two equal pieces.

  7. Shape each piece into a ring and place them on a baking sheet lined with parchment paper.

  8. Cover the dough rings with a damp cloth and let them rise for another 30 minutes.

  9. Preheat the oven to 375°F (190°C).

  10. Brush the dough rings with beaten egg and decorate them with candied fruit and sliced almonds.

  11. Bake the Roscón de Reyes for 20-25 minutes, until it becomes golden brown.

  12. Once the Roscón de Reyes is cooked, let it cool before serving.
