Make Delicious Pad Thai with Kitchen Pal


Ingredients:

  • 250 gr dried rice noodles

  • 1 tbsp vegetable oil

  • 2 garlic cloves, minced

  • 2 eggs, lightly beaten

  • 250 gr raw shrimp, peeled and deveined

  • 1 tbsp tamarind paste

  • 1 tbsp fish sauce

  • 2 tbsp brown sugar

  • 2 tbsp chopped peanuts

  • 1/2 cup bean sprouts

  • 1/4 cup chopped fresh cilantro

  • Lime wedges, for serving

Instructions:

  1. Soak the rice noodles in warm water for 30 minutes, or until soft. Drain and set aside.

  2. In a wok or large skillet, heat the vegetable oil over medium-high heat.

  3. Add the garlic and stir-fry for 30 seconds, or until fragrant.

  4. Add the eggs and stir-fry for 1 minute, or until scrambled.

  5. Add the shrimp and stir-fry for 2-3 minutes, or until cooked through.

  6. Add the soaked rice noodles and stir-fry for 1-2 minutes, or until softened.

  7. In a small bowl, mix the tamarind paste, fish sauce, and brown sugar. Add the mixture to the wok and stir-fry for 1-2 minutes, or until the noodles are coated and the sauce is heated through.

  8. Add the chopped peanuts, bean sprouts, and cilantro to the wok and stir-fry for an additional 1-2 minutes, or until the vegetables are slightly softened.

  9. Serve hot with lime wedges on the side.
