Homemade Italian Gelato Recipe - Creamy and Delicious Frozen Treats

  • 1 cup of heavy cream

  • 3/4 cup of granulated sugar

  • 4 egg yolks

  • 1 teaspoon of vanilla extract

  • 1/2 teaspoon of salt

Instructions:

  1. In a medium saucepan, combine the milk, heavy cream, and half of the sugar. Heat the mixture over medium heat, stirring occasionally, until it comes to a simmer.

  2. In a separate mixing bowl, whisk the egg yolks and the remaining sugar until light and fluffy. Add in the vanilla extract and salt and mix well.

  3. Slowly pour the hot milk mixture into the egg mixture, whisking constantly. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.

  4. Remove the mixture from heat and strain it through a fine-mesh sieve to remove any lumps. Let it cool to room temperature, then cover and chill in the refrigerator for at least 4 hours or overnight.

  5. Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it becomes thick and creamy.

  6. Transfer the gelato to an airtight container and freeze for an additional 2 hours or until firm.

  7. Scoop and serve!
