Make Delicious Fabada Asturiana with Kitchen Pal


Ingredients:

  • 500g white beans (preferably fabes de la granja)

  • 1 onion, chopped

  • 4 cloves of garlic, minced

  • 2 bay leaves

  • 1 tsp sweet paprika

  • 1 tsp smoked paprika

  • 1 chorizo sausage, sliced

  • 1 morcilla sausage, sliced

  • 150g pancetta, diced

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • Water, as needed

Instructions:

  1. In a large pot, soak the beans in water overnight, making sure they are completely submerged.

  2. The next day, drain the beans and rinse them thoroughly. Add them back to the pot with enough fresh water to cover them by at least an inch.

  3. Add the ham hock, chorizo, and pancetta to the pot with the beans. Bring the mixture to a boil, then reduce the heat and let it simmer for 2-3 hours until the beans are tender.

  4. While the beans are cooking, heat the olive oil in a large frying pan over medium heat. Add the onion, garlic, and bay leaves, and cook for 3-4 minutes until the onion is translucent.

  5. Add the tomato paste to the frying pan and cook for another 2-3 minutes until it has darkened slightly in color.

  6. Once the beans are tender, remove the ham hock from the pot and shred the meat into small pieces. Add the meat back to the pot with the beans.

  7. Add the onion and tomato mixture to the pot, along with the saffron and paprika. Stir everything together and let it simmer for another 10-15 minutes.

  8. Serve the fabada asturiana hot, with crusty bread on the side. Enjoy!

Note: This recipe makes a large batch, so you can freeze any leftovers for later. Simply let the fabada cool to room temperature, then transfer it to airtight containers and freeze for up to 3 months. To reheat, thaw the fabada in the refrigerator overnight, then reheat in a pot over medium-low heat until hot throughout.
