Instructions:
In a large pot, add the chopped spinach and blanch it in boiling water for 2-3 minutes. Drain the water and immediately transfer the spinach to a bowl of ice water. This will help retain the vibrant green color of the spinach.
Once the spinach is cool, transfer it to a blender or food processor and blend until it forms a smooth puree. Set aside.
In a pan, heat 2 tablespoons of oil and add cumin seeds. Once they start to sputter, add chopped onions, minced garlic, ginger, and green chilies. Saute until the onions turn translucent.
Add coriander powder, garam masala, and turmeric powder to the pan and mix well. Add the paneer cubes and saute for 2-3 minutes until they turn golden brown.
