Ingredients:

  • 500 gr fresh spinach, washed and chopped

  • 1 cup paneer, cut into cubes

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 2/5 cm piece of ginger, minced

  • 2 green chilies, chopped

  • 1 teaspoon cumin seeds

  • 1 teaspoon coriander powder

  • 1/2 teaspoon garam masala

  • 1/2 teaspoon turmeric powder

  • 1/4 cup heavy cream

  • 2 tablespoons oil

  • Salt to taste

Instructions:

  1. In a large pot, add the chopped spinach and blanch it in boiling water for 2-3 minutes. Drain the water and immediately transfer the spinach to a bowl of ice water. This will help retain the vibrant green color of the spinach.

  2. Once the spinach is cool, transfer it to a blender or food processor and blend until it forms a smooth puree. Set aside.

  3. In a pan, heat 2 tablespoons of oil and add cumin seeds. Once they start to sputter, add chopped onions, minced garlic, ginger, and green chilies. Saute until the onions turn translucent.

  4. Add coriander powder, garam masala, and turmeric powder to the pan and mix well. Add the paneer cubes and saute for 2-3 minutes until they turn golden brown.

  5. Pour the spinach puree into the pan and stir well. Add salt to taste and let the mixture cook for 5-7 minutes.

  6. Finally, add heavy cream to the pan and mix well. Let it simmer for another 2-3 minutes.

  7. Your palak paneer is now ready to be served! Garnish with fresh cream and serve hot with rice or naan.
