Instructions:



  1. To prepare the peppers, roast them over an open flame or in the oven until the skin is blackened and blistered.

  2. Place the peppers in a plastic bag or covered bowl to steam for 10-15 minutes, then carefully remove the skin, stem, and seeds. Stuff each pepper with a generous amount of cheese, making sure to seal the opening with a toothpick.

  3. In a separate bowl, whisk together the eggs, flour, milk, salt, and pepper until smooth. Heat the vegetable oil in a deep skillet over medium-high heat.

  4. Dip each pepper in the batter to coat, then carefully place it in the hot oil. Fry for 2-3 minutes on each side, or until golden brown and crispy.

  5. Drain on a paper towel-lined plate, then serve hot with your favorite toppings like salsa, guacamole, or sour cream.
