Ingredients:

For the dough:

  • 4 cups of all-purpose flour

  • 1 tsp of salt

  • 1 tbsp of active dry yeast

  • 1 tbsp of sugar

  • 1/2 cup of olive oil

  • 1 cup of warm water

For the filling:

  • 500gr of ground beef or lamb

  • 1 onion, finely chopped

  • 1/4 cup of parsley, finely chopped

  • 1/4 cup of tomato paste

  • 2 tbsp of pomegranate molasses

  • 1 tbsp of paprika

  • 1 tbsp of cumin

  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. In a mixing bowl, combine the flour, salt, sugar, and yeast. Add the olive oil and warm water and mix until you have a smooth dough.

  3. Knead the dough on a floured surface for 5-7 minutes until it's soft and elastic. Place it back in the bowl, cover it with a clean cloth, and let it rise for 20 minutes.

  4. In a separate bowl, mix the ground meat, onion, parsley, tomato paste, pomegranate molasses, paprika, cumin, salt, and pepper.

  5. Divide the dough into small balls and flatten them into 10 cm circles. Place them on a baking sheet lined with parchment paper.

  6. Spoon a small amount of the meat mixture onto each dough circle, leaving a small border around the edges.

  7. Bake in the preheated oven for 15-20 minutes, or until the dough is golden brown.

  8. Serve the Sfiha warm with a side of hummus or tahini sauce.
