Make Delicious Masala Dosa with Kitchen Pal


Ingredients:

  • 1 cup rice

  • 1/2 cup urad dal (skinned black gram)

  • 1/2 tsp fenugreek seeds

  • Salt, to taste

  • Oil, as needed

  • 2 cups boiled and mashed potatoes

  • 1 onion, chopped

  • 2-3 green chilies, chopped

  • 1/2 tsp turmeric powder

  • 1/2 tsp mustard seeds

  • 1/2 tsp cumin seeds

  • A few curries leaves

Instructions:

  1. Soak the rice, urad dal, and fenugreek seeds separately in water for at least 4-5 hours.

  2. Drain the water and grind the urad dal and fenugreek seeds to a fine, fluffy batter, adding water as needed. Do the same with the rice, adding water as needed, until you have a smooth batter.

  3. Combine the rice and urad dal batters, add salt, and mix well. Cover and let it ferment in a warm place for at least 8 hours.

  4. Once the batter has fermented, heat a non-stick pan over medium heat. Pour a ladleful of batter into the pan and spread it in a circular motion to make a thin crepe. Drizzle some oil around the edges and cook until crispy.

  5. In another pan, heat some oil and add mustard seeds. Once they splutter, add cumin seeds, chopped onion, green chilies, turmeric powder, and curry leaves. Saute until the onions turn translucent. Add the mashed potatoes and mix well. Cook for 2-3 minutes and remove from heat.

  6. Place a spoonful of the potato filling in the center of the dosa and fold it over.

  7. Serve hot with coconut chutney and sambar.

  8. Enjoy your meal!
