Ingredients:

  • 1/3 cup of granulated sugar, plus extra for dusting the ramekins

  • 170gr of high-quality semisweet chocolate, chopped

  • 1/4 cup of unsalted butter

  • 4 egg yolks

  • 6 egg whites

  • 1/4 teaspoon of cream of tartar

  • Pinch of salt

  • Powdered sugar for garnish

  • Whipped cream (optional)

Instructions:

  1. Preheat your oven to 375°F (160°C). Butter four 170gr ramekins and dust them with granulated sugar, shaking off any excess sugar.

  2. In a heatproof bowl, melt the chocolate and butter together over a pot of simmering water, stirring occasionally until smooth.

  3. In a separate mixing bowl, whisk together the egg yolks and 1/3 cup of granulated sugar until the mixture is thick and pale yellow.

  4. Gradually whisk the chocolate mixture into the egg yolk mixture until well combined.

  5. In another large mixing bowl, beat the egg whites, cream of tartar, and pinch of salt with an electric mixer until stiff peaks form.

  6. Gently fold one-third of the egg whites into the chocolate mixture until no white streaks remain. Repeat with the remaining egg whites until the mixture is evenly combined.

  7. Spoon the mixture into the prepared ramekins until they are about three-quarters full.

  8. Bake the soufflés for 12 to 15 minutes or until they have risen and the tops are set.

  9. Remove the soufflés from the oven and dust them with powdered sugar. Serve immediately with whipped cream if desired.
