  • 1 cup butter, softened

  • 2 cups granulated sugar

  • 4 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup dark rum

  • 2 cups mixed nuts (such as walnuts, pecans, and almonds), chopped

  • 1 cup dried fruits (such as raisins, currants, and dates), chopped

  • 1 cup dark chocolate, finely grated

Instructions:

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch round cake pan.

  2. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.

  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.

  5. Gradually add the dry ingredient mixture to the butter mixture, alternating with the milk and rum, beginning and ending with the dry ingredients.

  6. Fold in the chopped nuts, dried fruits, and grated dark chocolate until well combined.

  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  8. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.

  9. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

  10. Once the cake is completely cooled, you can frost or glaze it with your favorite icing or enjoy it as is.
