Instructions:
In a large mixing bowl, combine the flour, salt, and ajwain seeds (if using). Add the oil and mix well until it resembles breadcrumbs.
Gradually add water and knead the dough until it's smooth and pliable. Cover it with a damp cloth and let it rest for 30 minutes.
Meanwhile, prepare the filling. Heat some oil in a pan and add cumin seeds. Once they crackle, add the boiled peas and mashed potatoes. Mix well.
Add coriander powder, garam masala, red chili powder, and salt. Mix well and cook for 2-3 minutes.
Divide the dough into small balls and roll them into a circle.
Cut the circle in half and form a cone shape. Seal the edges with water.
Fill the cone with the potato and pea mixture and seal the top with water.
Repeat with the rest of the dough and filling.
Heat oil in a deep pan and fry the samosas until they are golden brown.
Serve hot with mint chutney or tamarind chutney.
