Ingredients:


Dough Ingredients:

  • 2 cups of all-purpose flour

  • 3 eggs

  • 1/2 teaspoon of salt

  • 1 tablespoon of olive oil

Filling Ingredients:

  • 1 cup of ricotta cheese

  • 1/2 cup of grated Parmesan cheese

  • 1 egg

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of black pepper

  • 1/4 teaspoon of nutmeg

Sauce Ingredients:

  • 1/2 cup of butter

  • 1/2 cup of heavy cream

  • 1/2 cup of grated Parmesan cheese

  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the flour and salt. Create a well in the center of the flour mixture and add the eggs and olive oil. Mix until the dough comes together, then knead for 10 minutes until smooth. Wrap the dough in plastic wrap and let it rest for 30 minutes.

  2. In another mixing bowl, combine the ricotta cheese, Parmesan cheese, egg, salt, black pepper, and nutmeg. Mix well and set aside.

  3. On a floured surface, roll out the dough to 3mm thickness. Cut the dough into 5cm circles using a cookie cutter or glass.

  4. Place a small spoonful of the filling onto each dough circle. Fold the circle in half and pinch the edges to seal the ravioli.

  5. Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-5 minutes, or until they float to the surface. Remove the ravioli with a slotted spoon and set aside.

  6. In a large skillet, melt the butter over medium heat. Add the heavy cream and Parmesan cheese, stirring until the sauce is smooth. Season with salt and pepper to taste.

  7. Add the cooked ravioli to the skillet and toss with the sauce until coated.

  8. Serve hot and enjoy!
