1 onion, chopped
2 cloves garlic, minced
2 carrots, diced
2 tablespoons tomato paste

For the mashed potato topping:
1kg of potatoes, peeled and cut into chunks
4 tablespoons unsalted butter
1/2 cup milk

Instructions:
Preheat the oven to 200°C/400°F.
In a large skillet, brown the ground beef over medium heat.
Add the chopped onion, minced garlic, and diced carrots to the skillet and sauté for 5-7 minutes, until the vegetables are softened.
Stir in the tomato paste, Worcestershire sauce, beef broth, and dried thyme.
Season the mixture with salt and pepper to taste.
Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes until the liquid has reduced and the mixture has thickened.
While the filling is simmering, prepare the mashed potato topping. Place the peeled and chopped potatoes in a pot of salted water and bring them to a boil.
Let the potatoes cook for 15-20 minutes until they are fork-tender.
Drain the potatoes and return them to the pot.
Add the butter and milk to the pot and mash the potatoes until they are smooth.
Season the mashed potatoes with salt and pepper to taste.
Pour the beef filling into a 23x33 cm baking dish.
Spoon the mashed potatoes over the top of the beef filling and spread them out evenly.
Use a fork to create ridges on the surface of the mashed potatoes.
Bake the Shepherd's Pie in the preheated oven for 25-30 minutes, until the top is golden brown.
