Make Mouthwatering Paella with Kitchen Pal


Ingredients:

  • 2 cups of short-grain Spanish rice

  • 500gr of chicken (boneless, skinless)

  • 500gr of seafood (shrimp, mussels, squid, etc.)

  • 1 onion, diced

  • 1 red bell pepper, diced

  • 3 cloves of garlic, minced

  • 1 can of diced tomatoes (14 oz)

  • 4 cups of chicken broth

  • 1 tsp of smoked paprika

  • 1 tsp of saffron threads

  • Salt and pepper

  • Olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a large paella pan or oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat.

  3. Add the diced onion and bell pepper to the pan and sauté until softened, about 5 minutes.

  4. Add the minced garlic and cook for another minute, stirring frequently.

  5. Cut the chicken into bite-sized pieces and add them to the pan. Cook for 5-7 minutes, until browned on all sides.

  6. Add the rice to the pan and stir until the rice is coated in the oil and begins to toast, about 2-3 minutes.

  7. Add the diced tomatoes, smoked paprika, and saffron threads to the pan and stir to combine.

  8. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low and let the mixture simmer for 15 minutes, stirring occasionally.

  9. Arrange the seafood on top of the rice mixture.

  10. Place the paella pan in the oven and bake for 15-20 minutes, until the seafood is cooked through and the rice is tender.

  11. Remove the paella from the oven and let it sit for 5-10 minutes before serving.

  12. Garnish with chopped parsley and lemon wedges, if desired.
