Make Delicious Ratatouille with Kitchen Pal


Ingredients:

  • 1 eggplant, cut into 1-inch cubes

  • 2 zucchinis, cut into 1-inch cubes

  • 1 yellow bell pepper, cut into 1-inch pieces

  • 1 red onion, chopped

  • 3 cloves of garlic, minced

  • 2 large tomatoes, chopped

  • 1/4 cup of olive oil

  • 1 teaspoon of dried thyme

  • 1 teaspoon of dried rosemary

  • 1 teaspoon of dried oregano

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of black pepper

  • Fresh basil leaves for garnish

Instructions:

  1. Preheat the oven to 375°F. (160°C)

  2. In a large bowl, mix together the eggplant, zucchini, bell pepper, red onion, garlic, thyme, rosemary, oregano, salt, and black pepper.

  3. Drizzle the olive oil over the vegetable mixture and toss to coat.

  4. Spread the vegetable mixture out in a single layer on a baking sheet.

  5. Roast in the preheated oven for 30-35 minutes, until the vegetables are tender and lightly browned.

  6. Remove the vegetables from the oven and transfer them to a large pot.

  7. Add the chopped tomatoes and stir to combine.

  8. Place the pot over medium heat and bring the mixture to a simmer.

  9. Cover and cook for 10-15 minutes, stirring occasionally until the flavors have melded together.

  10. Serve hot, garnished with fresh basil leaves.
