Ingredients:


For the crust:

  • 1 1/4 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, chilled and cubed

  • 3-4 tablespoons ice water

For the filling:

  • 1 cup heavy cream

  • 1 cup whole milk

  • 3 large eggs

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/8 teaspoon ground nutmeg

  • 1 cup grated Gruyere cheese

Instructions:

For the crust:

  • In a large mixing bowl, whisk together the flour and salt.

  • Add the cubed butter and mix with your hands or a pastry cutter until the mixture resembles coarse crumbs.

  • Add the ice water, one tablespoon at a time, until the dough comes together.

  • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  • Roll the dough out on a floured surface and place it in a 9-inch pie dish. Trim the edges and refrigerate until ready to use.

For the filling:

  • Preheat your oven to 375°F (190°C)

  • In a skillet, cook the bacon over medium heat until crispy. Remove with a slotted spoon and drain on paper towels.

  • In a mixing bowl, whisk together the heavy cream, whole milk, eggs, salt, pepper, and nutmeg.

  • Sprinkle the bacon and cheese evenly over the bottom of the prepared crust.

  • Pour the egg mixture over the top of the bacon and cheese.

  • Bake the quiche in the preheated oven for 45-50 minutes, or until the filling is set and golden brown.

  • Let the quiche cool for a few minutes before slicing and serving.
