Instructions:
Preheat your oven to 325°F (160°C).
In a medium saucepan, combine the heavy cream, 1/2 cup of granulated sugar, and the vanilla bean (if using) or vanilla extract. Heat over medium heat until the mixture comes to a simmer, stirring occasionally.
In a mixing bowl, whisk together the egg yolks and salt until well combined.
Slowly pour the hot cream mixture into the egg yolks while whisking continuously to temper the eggs.
Strain the mixture through a fine-mesh sieve to remove any lumps or curdled bits.
Pour the custard into 6 ramekins (about 4 ounces each) and place them in a baking dish. Add enough hot water to the baking dish to come halfway up the sides of the ramekins.

Remove the ramekins from the water bath and let them cool to room temperature.
Cover the ramekins with plastic wrap and refrigerate for at least 2 hours or up to 2 days.
