Classic Coq au Vin Recipe - Chicken in Red Wine Sauce

Coq au vin is a French dish called "rooster in wine." This classic recipe features chicken simmered in a rich red wine sauce with bacon, mushrooms, and herbs. It's a perfect hearty meal for a cozy night or a special occasion.


Make Delicious Coq au Vin with Kitchen Pal


Ingredients:

  • 4 chicken legs or thighs

  • 4 slices of bacon, chopped

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 2 cups of red wine (such as Burgundy or Pinot Noir)

  • 1 cup of chicken broth

  • 2 tablespoons of tomato paste

  • 1 tablespoon of flour

  • 1 tablespoon of butter

  • 1 bay leaf

  • 2 sprigs of thyme

  • 1 cup of sliced mushrooms

  • Salt and pepper, to taste

  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 325°F. (160°C)

  2. In a Dutch oven or heavy-bottomed pot, cook the bacon over medium heat until crisp. Remove with a slotted spoon and set aside.

  3. Season the chicken with salt and pepper. In the same pot, brown the chicken on all sides in the bacon fat. Remove and set aside.

  4. Add the onion and garlic to the pot and cook until softened.

  5. Add the red wine, chicken broth, tomato paste, bay leaf, and thyme. Stir to combine.

  6. Return the chicken and bacon to the pot. Cover and place in the oven for 1 hour.

  7. In a small bowl, mix together the flour and butter to form a paste.

  8. Remove the pot from the oven and stir the flour paste to thicken the sauce.

  9. Add the sliced mushrooms and cook on the stovetop over medium heat for 15-20 minutes until the mushrooms are tender and the sauce has thickened.

  10. Remove the bay leaf and thyme sprigs. Serve hot, garnished with fresh parsley.
