Time of Preparing:

  • Approximately 45 minutes.

Instructions:

  1. In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Use a slotted spoon to remove the bacon from the pot and set it aside, leaving the bacon grease in the pot.

  2. Add the onions, celery, and garlic to the pot and cook for about 5 minutes, or until the vegetables are softened.

  3. Add the potatoes, clam juice, and water to the pot. Bring the mixture to a boil and then reduce the heat to medium-low. Simmer for about 15-20 minutes or until the potatoes are tender.

  4. In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1-2 minutes, whisking constantly. Gradually add in the half-and-half, whisking constantly to prevent any lumps from forming.

  5. Add the creamy mixture to the pot with the potatoes and stir to combine.

  6. Add the clams and bacon to the pot and season with salt, pepper, and thyme to taste. Let the chowder simmer for about 5-10 minutes, or until the clams are heated through.

  7. Serve the clam chowder hot, garnished with fresh parsley or chives.

  8. Enjoy your meal!
