Total Time: 1 hour
Instructions:
Preheat the oven to 350°F (180°C) and grease two 9-inch cake pans.
In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, then mix in the vanilla extract and red food coloring.
Gradually mix in the dry ingredients and buttermilk, alternating between the two and beginning and ending with the dry ingredients.
In a small bowl, mix together the vinegar and baking soda, then add it to the batter and stir until well combined.
Pour the batter evenly into the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes before removing them from the pans and placing them on a wire rack to cool completely.
While the cakes cool, prepare the cream cheese frosting by creaming together the cream cheese and butter in a large bowl.
Mix in the powdered sugar and vanilla extract until smooth and creamy.
Once the cakes are completely cool, spread a layer of frosting on top of one cake, then place the other cake on top of it and frost the top and sides of the cake.
Chill the cake in the refrigerator for at least 30 minutes before serving to allow the frosting to set.
