Time of Preparing:
1 hour and 30 minutes
Instructions:
Preheat oven to 375°F (190°C).
In a large bowl, whisk together flour, salt, and sugar.
Using a pastry blender or your hands, cut the butter into the flour mixture until it resembles coarse crumbs.
Add the ice water, 1 tbsp at a time, until the dough comes together.
Divide the dough into two pieces, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
In a large bowl, toss the sliced apples with lemon juice.
In a small bowl, mix the granulated sugar, brown sugar, cinnamon, nutmeg, and allspice.
Add the sugar mixture to the apples and toss to combine.
On a floured surface, roll out one disk of dough into a circle that’s about 12 inches in diameter.
Carefully transfer the dough to a 23cm pie dish, pressing it into the bottom and up the sides.
Pour the apple mixture into the pie dish and dot it with 2 tbsp of butter.
Roll out the second disk of dough and place it on top of the apple mixture.
Trim the edges of the dough and crimp them together to seal the pie.
In a small bowl, whisk together the egg and water to make an egg wash.
Brush the egg wash over the top of the pie and sprinkle with coarse sugar.
Use a sharp knife to cut a few slits in the top of the pie to allow steam to escape.
Bake for 45 to 50 minutes, or until the crust is golden brown and the filling is bubbling.
Let cool for at least 30 minutes before slicing and serving.
