Instructions:
Preheat oven to 375°F (190°C). Cut tortillas into quarters or eighths and fry in hot oil until crispy. Drain on paper towels and set aside.
In a medium saucepan, sauté onion, and garlic until translucent. Add salsa, chicken or vegetable broth, jalapeños, ground cumin, salt, and pepper. Simmer for 10-15 minutes until the sauce has thickened.
In a large mixing bowl, toss the fried tortilla chips with the tomato sauce until fully coated. Transfer the mixture to a baking dish and sprinkle with shredded cheese.
Bake in the preheated oven for 10-15 minutes or until the cheese is melted and bubbly.
While the chilaquiles are baking, heat the refried beans in a small saucepan over medium heat.
In a separate pan, fry the eggs to your desired doneness.
Serve the baked chilaquiles with a side of refried beans, sliced avocado, and fried eggs.
