  • 2 cans of coconut milk

  • 2 tablespoons of green curry paste

  • 1 pound of boneless chicken, beef, pork, or vegetables (tofu, eggplant, zucchini, green beans, etc.)

  • 1 tablespoon of fish sauce

  • 1 tablespoon of palm sugar or brown sugar

  • 2 kaffir lime leaves

  • 1 small onion, sliced

  • 1 red bell pepper, sliced

  • 1 cup of Thai basil leaves

  4. Add the fish sauce, sugar, kaffir lime leaves, onion, and red bell pepper to the pot and stir well.

  5. Pour in the second can of coconut milk and bring the curry to a simmer.

  6. Cook for 5-7 more minutes until the vegetables are tender and the flavors have blended well.

  7. Add the Thai basil leaves and stir for a minute before removing them from the heat.

  8. Serve hot with steamed rice.
