Ingredients:

  • 500 gr of lamb, beef, or chicken, cut into small pieces

  • 2 onions, chopped

  • 4 garlic cloves, minced

  • 1-inch piece of ginger, peeled and minced

  • 2 tomatoes, chopped

  • 2 tbsp vegetable oil

  • 1 tbsp cumin seeds

  • 1 tbsp coriander seeds

  • 2 tsp ground cardamom

  • 2 tsp ground cinnamon

  • 1 tsp ground cloves

  • 1 tsp paprika

  • 1 tsp turmeric

  • 1 tsp salt

  • 1 cup water

  • Fresh cilantro leaves, chopped (for garnish)

Instructions:

  1. In a large pot, heat the oil over medium-high heat. Add the cumin and coriander seeds and cook until fragrant, about 1 minute.

  2. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent about 5 minutes.

  3. Add the meat and cook until browned on all sides.

  4. Add the tomatoes, cardamom, cinnamon, cloves, paprika, turmeric, and salt. Stir well to combine.

  5. Add the water and bring it to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 hour, stirring occasionally.

  6. Once the meat is tender and the sauce has thickened, remove from heat.

  7. Serve hot with rice or naan bread, and garnish with fresh cilantro leaves.
